About Pauline

Pauline was born and raised in the Queensland town of Maryborough, Australia. After obtaining a Bachelor of Psychology Degree from the University of Southern Queensland, Pauline spent nine years working for the State Government in Mackay and Brisbane. During that time she held a number of Social Work positions within the community, The Children’s Court and in a Juvenile Detention Centre.

Pauline now lives on the Sunshine Coast with her husband Frank and their three children. When their eldest child, Emmanuelle (Manny) turned seven, she suddenly developed severe facial eczema. Through a supervised elimination diet, it was discovered that Manny had multiple food intolerances. While her condition became manageable, Pauline’s frustration in trying to find suitable recipes and access reliable medical information was the source of inspiration for ‘The Allergy Menu’. Pauline keenly understands how cooking can become a burden, when EVERY meal and snack has to be planned ahead and cooked from scratch.

She has also experienced the anxiety that comes from knowing that her child’s health may be detrimentally affected when she consumes certain foods. By virtue of her daughter’s health condition, Pauline has become a passionate health researcher devouring books on allergies, intolerances, nutrition, auto-immune diseases and environmental medicine. Her latest ambition is to learn more about systems biology having been introduced to it at the practitioner’s sessions of the ‘Mindd International Forum on Children in August 2011’.

Pauline attends as many health conferences as her busy life allows and is keenly anticipating the next phase of ‘The Allergy Menu’s development, where she will be interviewing health experts from a range of disciplines and sharing their insights with The Allergy Menu Community.
